I am continually looking for new and healthy recipes to try out on this kids, so I was very excited to get the opportunity to create an easy family recipe for Gorton’s with their Simply Bake Salmon! I wanted a dish that felt like it could work for either lunch or dinner and not be too heavy with its sides. I ended up going with Mediterranean flavors, including sides of peppers and quinoa and a topping of feta cheese and tomatoes.
Gluten Free Mediterranean Salmon & Quinoa
SUPPLIES
- Cutting Board
- Large Cookie Sheet
- Large Mixing Bowl
- Tin Foil (optional)
Ingredients
Sheet Pan
- 2 boxes Gorton's Simply Bake Salmon
- 2 lemons sliced
- 3 Bell Peppers red, green & orange, sliced
- ¼ cup Balsamic Vinaigrette
- 1 tsp Garlic Powder
- ½ tsp salt
- ½ tsp pepper
Topping
- 6 oz Feta Cheese
- ½ pint Roma Tomatoes
- 1 TBS Balsamic Vinaigrette
- 1 tsp oregano
Serve With
- 1 cup Quinoa (3 cups once prepped)
Instructions
- Preheat Oven to 350
- Wash peppers, then slice along with lemons
- In a large mixing bowl, mix the Balsamic Vinaigrette and spices, then toss with sliced peppers and lemon
- On a large cookie sheet, prep approx ⅓ of the pan with a tin foil barrier. Add peppers and lemons to tinfoil section and lay out salmon pouches on the remaining pan space. Bake for 24 minutes
- While the salmon is baking, prep quinoa according to directions on packing.
- I also prepped the topping while the quinoa was on the stove: simply mix all ingredients in the "topping" section
- Once everything has finished cooking, plate quinoa and salmon. I topped with a little bit of the juices from the salmon bag, followed by the prepared topping mixture
Notes
I absolutely love how all the flavors turned out. Each ingredient complimented each other beautifully, and most of the kids even ate it as well (which is definitely a win with 6 kiddos!) We will definitely be adding this one to the meal planning rotation.
