Let me start off by saying that this recipe is ALL WES. We love pretty much anything smothered with cheese around here, and this was no exception. It turned out great! And the best part is, I didn’t have to do a thing. Thanks hun!
Three Cheese Chicken and Spinach Rollups
Three rich cheeses and delicious spinach all rolled together with juicy chicken for the perfect savory meal.
SUPPLIES
- sauté pan
- whisk or fork
- medium bowl
- knife
- 8x8 or 9x9 baking dish
Ingredients
- 2 cloves garlic
- 2 cups spinach
- 1/2 cup Ricotta cheese
- 1/4 cup Parmesan cheese
- 4 chicken breasts thinly sliced
- salt & pepper
- 2 eggs
- 1 cup GF breadcrumbs seasoned
- 1 cup spaghetti sauce
- 1 cup Mozzarella
- fresh basil optional topping
Instructions
- Preheat oven to 450.
- Add oil, spinach and garlic to pan: sauté until the spinach wilts.
- Next add the ricotta, parmesan, salt, and pepper, and stir until heated.
- Lay out "flattened" chicken breasts, divide the cheese mixture even amongst them, then roll them up.
- Beat eggs in bowl, then dip roll-ups until completely coated.
- Next, roll in breadcrumbs and place in a 8×8 or 9×9 baking dish {seam side down} & bake for 25 minutes.
- Remove from oven and top with marinara sauce and mozzarella.
- Bake an additional 5 minutes, then remove from oven and top with basil.

March 16, 2016 at 6:48 pmI have to agree, anything smothered with cheese is good with me (I noticed this on our instagram as almost every dinner this week has had a blanket of melty cheese on top, haha!) and this looks SO good!
I’m going to have to try this out for dinner – with nomato sauce for me!
