This week we returned from our little mini-vacation to discover we didn’t have much food on hand. Freezer meal to the rescue! We doubled the recipe on prep day, so we have another waiting for us at some point… one batch makes quite a bit though!
Gluten Free {Crockpot} Sausage & Spinach Soup
SUPPLIES
- Crock Pot
- Cutting Board
- knife
- Skillet
Ingredients
- 1/2 lb carrots sliced
- 1 onion diced
- 15 oz white kidney beans
- 1 bundle spinach chopped
- 1 lb ground sausage cooked
- 4 cuos chicken broth
Instructions
- Prep Veggies and Cook Sausage
Same Day Crock Pot
- Add all ingredients to crock pot and cook on low for 6 hours
Freezer Meal Prep
- Label Freezer bag
- Add all ingredients except the broth to bag, remove as much air as possible, and seal. Freeze
- When ready, add frozen contents of bag + the 4 cups of chicken broth to crockpot
- Cook on low for 8 hours
Notes
When freezing with baggies, I like to store my freezer bags upright so the contents freeze in sort of a rectangular shape and can go straight from freezer to crockpot
