Gluten Free Pizza Rolls

After Wes and I got married {just a few months after I found out I have Celiac Disease,} Pizza Rolls were one of the very first things we tried to make gluten free! They actually turned out pretty well, and encouraged me to keep trying new recipes. I thought it was only fitting that it should be one of the first recipes I “re-shared” on our new blog!

Gluten Free Pizza Rolls

Prep Time 30 minutes
Cook Time 15 minutes
Total Time 45 minutes
Course Main Course, Snack
Cuisine American, Italian
Servings 4

  • 2 cups gluten free flour {Pamela's "Bread Mix" or "Artisan Blend" and "Better Batter" are good options}
  • 1 cup hot water {may not need entire cup}
  • 1 tbsp salt

  • 1 1/2 cups Mozzarella cheese, finely shredded
  • 8 oz mini pepperonis
  • half green pepper, finely minced
  • 1/4 cup fresh mushrooms, finely minced
  • 14 oz pizza sauce

  • extra flour for rolling out dough
  • oil, to coat rolls

  • Preheat oven to 400 degrees
  • Blend the flour and salt in a medium bowl. Add water slowly until dough is only slightly sticky {different gluten free flours will take varying amounts of water - may not need full cup}
  • Allow the dough to rest for at least 10 minutes
  • After adding flour to surface of counter, knead enough extra flour into the dough to make it smooth and non-sticky
  • Roll dough out to a thickness of 1/8 inch, then use a pizza cutter to cut a grid of 1.5"x3" {approx.} rectangles
  • Next, combine the filling ingredients
  • Place a teaspoon of filling in center of each egg roll and moisten all sides with a little water. {Though it might seem tempting, don't over-stuff!}
  • Fold the wrapper in half, lengthwise, so that you have formed a filled rectangle. Press edges lightly to seal
  • Add rolls to baking sheet then use a basting brush to coat with a small amount of oil
  • Bake at 400 degrees for 10-15 minutes or until browned and crispy

Once baked, these rolls can be frozen and reheated at a later time!

      haha yes! Are pizza rolls not a thing in Australia? I must admit it’s been a while since we’ve made these ha, but so so good!

    Hi, I want to thank you so much for making this recipe. Pizza rolls have been my life blood for years, and literally yesterday I found out that because I have PCOS, the doctor recommends the best course of action is going on a gluten-free diet. I decided to make a plate this morning but right before I did I looked at the ingredients. I actually wanted to cry, I didn’t realize that wheat was in basically everything that I eat.
    You’re so amazing, thank you so much again. 🙂
