Gluten Free Four Cheese Ravioli

We’ve been talking about making our own ravioli for quite a while now…

I bought some sweet little contraptions on zulily a while back that would make it a lot easier than the time we made heart shaped ravioli… it was surprising simple this round! We all really enjoyed how they turned out: so much so that we’ve already made them twice this week!

 

Gluten Free Four Cheese Ravioli

Ingredients
  

Pasta Dough

  • 2 cups Pamela's Artisan Blend flour
  • 1 pinch salt
  • 1 tsp olive oil
  • 2 eggs
  • 3/4 cup water

Filling

  • 8 oz Ricotta cheese
  • 4 oz cream cheese
  • 1/2 cup Mozzarella shredded
  • 1/2 cup Provalone shredded
  • 2 tsp basil

Instructions
 

  • Place dough ingredients in bowl, and combine with hands. Knead until smooth.
  • Combine ingredients for filling, then set aside.
  • In a large pot, start to bring water to a boil on stove.
  • Roll out pasta dough to about the thickness of a coin. For the next part, we used our special pasta/pastry maker to cut and seal our raviolis. If you don't have one handy, use a pizza cutter or knife to cut dough into 2'x2" squares.
  • Next add about a tablespoon of filling to your cut shape (If you're using the square method, leave half of the squares for the tops!
  • With our pasta maker, we simply had to fold to seal. If using squares, press all four edges with a fork.
  • When all the raviolis are prepped, gently place in boiling water. They will rise to the top of the water when they are ready. {Time will vary based on the size, ours were around 5-8 minutes}
  • Top with your favorite spaghetti sauce, and enjoy!
